LC Creamed Spinach

This creamed spinach is so goooood!


Whole portion is 8g net carbs.
Each serving is  2g net carbs,
*Note: carbs are from onions and garlic, which can be omitted for 0g net carbs.

Ingredients
1 pk Frozen spinach, or 2 lbs fresh spinach
1 tbsp Olive oil
1 tbsp Butter
1 tbsp Dried onions 
1 tsp Minced garlic, or dried garlic
1 tsp salt and pepper, to taste
1 tsp Better than Bouillon, or chicken bouillon (optional)
1/2 cup Heavy cream

Instructions
Melt butter with oil in a medium saute pan over medium-high heat. 

Add garlic and onions, and cook for 30 seconds. Add frozen spinach and cook for 5 minutes.

Add cream, salt, and pepper. Cook until cream is reduced by half, about 3 minutes.

Remove from heat and serve immediately.


Serves 4


LC Pan Fried Whiting

What to do with soy flour? I tried to make a loaf of low-carb bread and that didn't turn out as expected. So, I used it as breading and it turned out GREAT!

Whole portion is 16g net carbs.
Each serving is  2.7g net carbs,


Ingredients
6 Whiting fillets, or any flaky white fish
1 lg Egg, beaten
1/2 cup Soy flour
1/2 cup Almond meal flour
1 tbsp Old Bay seasoning, or seafood seasoning
1 tsp salt, to taste
1 cup Oil (I used olive oil)

Instructions
Rinse the whiting fillets, and pat dry. 

Combine in a pan the soy flour, almond meal flour, Old Bay seasoning, and salt. 

Brush the fish with egg. Lightly dredge the fish in the flour pan. Set each piece of fish aside to let them absorb the flour.

Add oil to a non-stick pan and set heat to medium, heating oil until hot.  

Cook the fish until golden brown, about 3-4 minutes on each side. Remove from the pan and place on plate.

Optional: You can transfer the fish to a baking sheet and keep warm in the oven while you're frying the rest of the fish.

LC Creamsicle Cheesecake

Got a sweet tooth? Try this no-bake creamsicle cheesecake.

Whole portion is 824 calories, 26g net carbs, 72g fat, 16g protein.
Each serving is 206 calories, 6.5g net carbs, 18g fat, 4g protein.

Ingredients
14 oz Boiled water
8 oz Cream Cheese, room temperature
1 pk Simply delish orange Jel dessert


Instructions
Add all ingredients in a medium mixing bowl. Whisk or mix in blender until all ingredients are smooth. 

Pour into 4 serving cups. Refrigerate for 1 hour before serving.

Salmon Burgers

Salmon Burgers, just like Tuna Cakes but made with salmon and different ingredients.

Ingredients
15 oz (2-3 cans) salmon
1 lg egg
4 tbsp olive oil, divided 
1 tsp Worcestershire sauce
1/4 cup chopped parsley (or 1 tbsp dried)
2 tbsp dried onions
1 tbsp flour (optional, or substitute with coconut, soybean, or almond flour for low-carb)
1 tsp lemon juice
salt and pepper to taste

Instructions
In a small bowl whisk the egg, half of the olive oil, Worcestershire sauce until smooth. 

In a medium bowl lightly toss the salmon with the flour, parsley, onions, lemon juice, salt, and pepper.

Gently fold in the wet mixture in with the salmon mixture. 

Scoop the salmon mixture and form into four patties; lightly pack them.

In a large pan, heat remaining olive oil until shimmering. Add the salmon burgers and cook over moderately high heat until deeply golden and heated through, about 3 minutes per side. 

Serve the salmon with lemon wedges.

Low Carb Pizza


Sometimes you want something other than cauliflower dough pizza. Sometimes you don't want to experiment with making your own crust using low-carb concoctions. Here is an easy thin crust pizza recipe.

Whole portion is 405 calories, 21g net carbs, 25.5g fat, 30.5g protein.
Each piece is 101 calories, 5.2g net carbs, 6.4g fat, 7.6g protein.


Ingredients
1 wrap Damascus All Natural Roll Ups - Whole Wheat Bake Sense or any low-carb wrap
2 tbsp olive oil, divided
1/2 cup shredded mozzarella cheese
1/2 cup  marinara sauce or pasta sauce
1 tbsp Parmesan cheese
1/4 tsp Italian seasoning (optional)

Instructions
Heat oven to 375 F.

Place wrap on a baking sheet lined with foil. Spray/brush olive oil on the wrap. Bake in the oven for 8 minutes, *then turn over the wrap and spray/brush remaining olive oil. Bake for 8 minutes. 

Take the wrap out of the oven and add sauce, mozzarella, Parmesan, and Italian seasoning. Return to the oven for 8-10 minutes, or until golden brown.

Wait for 1 minute before slicing the pizza.

*Note: The additional baking will give the crust a crispy crunch. You can skip this step if you want to add the ingredients straight on the wrap. Bake for 10-12 minutes instead.

Tuna Cakes


I really wanted crab cakes but didn't want to pay the price for them. After all, my New Year's resolution is to save more. So I made Tuna Cakes to satisfy the craving... and yes, these tuna cakes are very tasty indeed.

Ingredients
15 oz (2-3 cans) tuna
1 lg egg

1 tbsp plain greek yogurt
1 tbsp mustard
1 tsp Worcestershire sauce
1 tsp Old Bay seasoning
1/4 cup chopped parsley (or 1 tbsp dried)
1 tbsp flour (optinal, or substitute with coconut, soybean, or almond flour for low-carb)
1 tsp lemon juice

Instructions
In a small bowl whisk the egg, half of the olive oil, yogurt, mustard, Worcestershire sauce until smooth. 

In a medium bowl lightly toss the tuna with the flour, parsley, Old Bay, and lemon juice.

Gently fold in the wet mixture in with the tuna mixture. 

Scoop the tuna mixture and form into four patties; lightly pack them.

In a large pan, heat remaining olive oil until shimmering. Add the tuna cakes and cook over moderately high heat until deeply golden and heated through, about 3 minutes per side. Optional: sprinkle additional Old Bay on each side.

Serve the tuna cakes with lemon wedges and mustard.

Skinny Cole Slaw

Ingredients
1/2 head of cabbage - shredded


Dressing:
1/2 cup Mayonnaise 
1/4 cup Almond Milk (or soy milk)
2 tablespoons lemon juice
2 packets Stevia
1/4 teaspoon celery seed
Salt and pepper to taste


Place cabbage in large bowl, adding any of the optional ingredients. Set aside. 

In a large bowl, combine all ingredients for the dressing. Add shredded cabbage, stir well. Refrigerate  Good for two weeks.

Seed Granola Bar

Ingredients

Dry:
1 cup rolled oats (oatmeal)
1/4 cup sliced almonds
1/4 cup chopped peanuts
1/4 cup chopped pecan
1/4 cup sunflower seeds
2 tablespoons sesame seeds
1/2 cup chia seeds

Wet:
2 tablespoons coconut oil
2 tablespoons honey
2 tablespoons apple butter
2 teaspoons pure vanilla extract
1/2 cup chopped pitted dates

Directions

Preheat the oven to 350 degrees F. Butter an 8 by 12-inch baking dish and line it with parchment paper.
Mix dry ingredients together in a bowl. Mix wet ingredients together in a separate bowl. Add the wet ingredients to the dry ingredients. Stir until well mixed.
Pour the mixture into the prepared pan. Use a silicon spatula to press the mixture into an even layer.
Bake for 25 to 30 minutes, until light golden brown. Cool for at least 2 to 3 hours before cutting.

Olive Oil Mayonnaise with Quick Eggs


Olive Oil Mayonnaise Using Egg Substitute

Ingredients:

Quick eggs (Trader Joe's) to equal 1 egg * pasteurized
1 teaspoon mustard
1/4 teaspoon salt
1 cup olive oil
3 teaspoons fresh lemon juice or vinegar
Pinch of cayenne pepper, optional

Mix the egg substitute, mustard, cayenne pepper, and salt in a blender at high speed for 20 seconds.

Slowly add oil through the top of the blender at medium speed until it's think and creamy.

Blend in lemon juice just until mixed.  Refrigerate. Good for 2 weeks.

Chocolate Covered Strawberry Cookies

SERVES 36

Ingredients
2 1/4 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup butter
1 teaspoon vanilla
2 eggs
3/4 cup sugar
3/4 cup brown sugar
1 cup chocolate chips
1 cup dried strawberries, chopped

Directions
1 In one bowl, sift the flour, baking soda and salt.
2 In a second bowl, cream the butter with the sugars, vanilla and eggs.
3 Slowly combine the flour mxture with the wet ingredients.
4 Stir in the chips and strawberries.
5 Refrigerate for an hour, or until dough is firm.
6 Roll into one inch balls and place on greased, parchment-lined cookie sheets.
7 Bake at 325 degrees for 13 minutes.

Snow Globe Cookies

2 cups confectioners’ sugar
2 tablespoons plus 2 teaspoons water
4-1/2 teaspoons meringue powder
1/4 teaspoon cream of tartar
6 sugar cookies (about 3-1/2 inches)
Assorted decorations: miniature marshmallows, orange and brown jimmies, Fruit Roll-Ups, spearmint leaves, peppermint candies, edible glitter and holiday sprinkles
3 clear plastic ornaments (3 inches)
  1. In a small mixing bowl, combine the confectioners’ sugar, water, meringue powder and cream of tartar; beat on low speed just until combined. Beat on high for 4-5 minutes or until stiff peaks form. Cover frosting with a damp cloth between uses. If necessary, beat again on high speed to restore texture.
  2. Working with one cookie at a time, spread 2 tablespoons frosting over the top of cookie.
  3. For snowman, cut two miniature marshmallows in half. Attach three halves with a small amount of frosting. Decorate face with jimmies. For scarf, trim a thin 1-1/2-in. strip from a Fruit Roll-Up. Shape a toboggan from a strip of Fruit Roll-Up; attach toboggan to cookie. Attach snowman to toboggan. Add spearmint leaves for trees.
  4. With a dab of frosting, attach four peppermint candies to the bottom of each cookie. Let stand overnight to dry completely.
  5. To assemble, separate ornaments into halves. Working with one cookie at a time, spread edge of ornament half with frosting. Place 1 teaspoon edible glitter and 1 teaspoon holiday sprinkles inside ornament; carefully invert decorated cookie onto ornament half, sealing edges. Use frosting and a star tip to pipe a decorative edge around globe. Let stand until set. Store in an airtight container. Yield: 6 snow globes.
