Creamy Cheddar Cheese Sauce

Ingredients:
3 tbsp (45 mL) butter
3 tbsp (45 mL) all-purpose flour
1 3/4 cups (425 mL) milk
1 cup (250 mL) grated sharp cheddar cheese (4 oz/125 g)
1/2 tsp (2 mL) dry mustard
1/2 tsp (2 mL) salt
1/8 tsp (0.5 mL) ground cayenne pepper

Directions:
In (2-qt./1.8 L) Saucepan, melt butter over medium heat. Add flour; whisk until well blended using Stainless/Silicone Sauce Whisk. Cook 1 minute, whisking constantly (do not allow to brown). Add milk all at once; whisk until smooth. Bring to a simmer, stirring constantly until thickened. Cook an additional 10 minutes, stirring occasionally.
Remove from heat. Add cheese, mustard, salt and cayenne pepper; whisk until smooth.

Yield: 2 cups sauce
